Ingrediënten
- 75 g pompoen
- 1 ui
- 4 preien ( allen het wit )
- 50 g boter
- zout
- 1 ½ liter magere bouillon
- 1 glas melk
Bereiden
- verwijder de schil en de pitjes van de pompoen , en snijd het vlees in blokjes . was de preien heel grondig , laat ze uitlekken , en snijd ze in rondjes .schil en haak de ui fijn.
- smelt in een kookpan de helft van de boter en laat de ui en de prei daarin gedurende 10 minuten zacht worden en heel lichtjes bruin kleuren .
- voeg de blokjes pompoen toe en wat zout en laat een half uur koken op een zacht vuurtje .
- maak de groenten vervolgens fijn met de mixer en doe ze terug in de kookpan
- ondertussen werd de bouilon opgewarmd . voeg de bouillon onder voortdurend roeren bij de groentenpuree en blijf roeren tot de soep kookt
- voeg dan het glas melk toe en roer de rest van de boter toe . proef of de soep voldoende gekruid is ,zo niet voeg pepper en/of zout toe.
- onmiddellijk opdienen , eventueel met croutons of gehakte peterselie
