- 500g spruitjes
- 2 wortelen
- 50 g zuring
- 2l blond bier
- 50 g rijst
- 50 g boter
- 750 g aardappelen
- peper
- zout
- eventueel ¼ liter melk
Hoe maak je soep
- fruit in 50 g boter de schoongemaakte en in plakjes gesneden wortel en de grof gehakte zuring
- laat dit zachtjes pruttelen gedurende ca 3 minuten
- voeg ¼ liter van het bier en voeg daar de rijst aan toe,laat dit gedurende 10 a minuten op zacht vuur doorkoken
- kook de spruitjes en de aardappelen in water met zout gaar
- hak ze grof fijn na het koken
- voeg peper toe en de rest van de boter
- vervarm tenslotte 1 ½ liter bier . voeg beetje bij beetje de gehakte spruitjes en aardappelen toe; daarna de wortelen en de zuring . voeg tenslotte de rijst toe. breng alles op smaak met zout en peper . laat de soep op klein vuur door en door warm worden. voeg voor het opdienen nog wat boter toe
- wilt u de melk nog aan de soep toevoegen,doe dat dan als laatste ,net voor het opdienen . de melk moet dan heel even meekoken
